#12: This Meal Is No Picnic
Chef: “Okay, I want this restaurant to really capture the feeling of eating barbecue at one of those hole-in-the-wall places attached to small-town gas stations. How are we going to do that?” Restaurant owner: “Spend decades perfecting your rib cooking technique and your secret barbecue sauce recipe, like the pit masters at those restaurants?”

Chef: “Wrong! Clearly what makes those places special is sitting on a picnic table outside the gas station because there’s no room inside the restaurant for tables. And I know just how to capture that picnic table feeling!”
