What is it with humans and wanting to eat stuff that might potentially be poisonous to us? The one thing that we can give them is that a lot of the things that are harmful about certain foods are strictly available in their raw form. With the rhubarb plant, that factor is no different.
The leaves of the rhubarb plant contain a chemical known as oxalic acid. It can be lethal to humans when consumed in large doses. You shouldn’t worry that much; it’s not found in every leaf, and you would need to consume a large amount to put yourself in danger. However, it’s still a crucial thing to be aware of! Just make sure you don’t eat raw rhubarb.
